Vegan Chocolate Shakeology White Chocolate PB cups !!

Are you thinking .. Say what?? ...Let me just say ..OH EM GEE ..these are sinfully delicious ..and HEALTHY! :D (Probably a bit healthier if you used just regular natural peanut butter, you could also use banana and pb mixed (see below), you could even just put some almonds in the middle.. get creative!) I used White Chocolate Wonderful from Peanut Butter & Co. in these, which is all natural and vegan and gluten free.. all that good stuff.

I can't say much more than these are AH-MAY-ZING and totally satisfy my sweet craving, if and when I get one.
Alright, enough raving about how awesome these are... Here's the recipe!

4 Tbsp melted coconut oil
5 Tbsp Vegan Chocolate Shakeology
6 tsp of White Chocolate Wonderful natural peanut butter
6 paper muffin/cupcake wrappers
Mix together melted coconut oil and Shakeology - gently.
Fill base of cups with about half of mixture, place in freezer for about 5 mins or until solidified.
Remove from freezer, place tsp of White Chocolate Wonderful peanut butter into each cup (as the filling), then pour remaining Shakeology mixture over top and place back in freezer!
Freeze at least 20-30 mins. Then Enjoy! I have tried these also with banana/pb mix in the middle....

For these ones... while bottom layer of chocolate/coconut oil mix freezes, mix one banana and 2 Tbsp of natural crunchy peanut butter together (I just mashed it up together on a plate), put the banana/pb mixture into a plastic baggie and cut a hole in the corner, then squeeze into cups as filling, then place remaining chocolate Shakeology mixture on top! Place in freezer to solidify! Soooo yummy!
