~~ Vegan Chocolate Shakeology Mug Cake ~~

Ok.... SO I guess you can say I like chocolate! Is that so wrong?? ;)

Yes, I try to generally eat healthy and eat clean ...but sometimes I need to satisfy that 'sweet tooth'! and Shakeology is chocolatey goodness so it does just that! AND it's superfood nutrition so this is actually GOOD for you!! ;) Ok, so maybe being combined with other ingredients and microwaved, it's not really "good for you" BUT it's certainly much better than some other options out there! I'd take this over a lot other dessert cakes and cookies out there on the shelves!

No I'm not the first to take a stab at this but maybe I am with putting 'dark chocolate peanut butter' inside #BOOYAH and Shakeology frosting on top #OOHHHLALA ha ha #yumm #yummyinmytummy

On to the good stuff...

Ingredients: 1 scoop vegan chocolate Shakeology

1/4 tsp baking powder

1 pinch salt

1 tsp unsweetened cocoa powder 1 egg 3 Tbsp. unsweetened almond milk

splash of vanilla 1 Tbsp of fave nut butter (I used Dark Chocolate Dreams natural peanut butter from Peanut Butter & Co)

Prep:

Oil or spray large mug. I rubbed some coconut oil in mine. Mix all the dry ingredients together in mug. Add the wet ingredients minus the nut butter, and mix well! Push the nut butter down into the center of the mixture. Microwave for 60-90 seconds.

Let cake cool a bit before transferring or put your toppings right into the mug.

Topping: I used some more Shakeology and added almond milk til it had a frosting consistency and VOILA!
