Sweet Treats - The Healthy Way

I love me some dessert and when I can have a sweet treat and know it's 'healthy', that makes me happy :D Everywhere I looked I was seeing 'dates' and 'medjool dates' for all sorts of recipes of sweet caramelly chocolatey beings of goodness. So... I bought myself some dates and ventured in and tried me a few of these simple tasty looking recipes :)

First 'go' at it - Nutty Energy Bites Ingredients:
1 cup oats
1/2 cup nat. PB (or other nut butter) - (I didn't have smooth PB on hand so I used 1/2 C. crunchy peanut butter plus some almond butter to add some smoothness/stickiness)
1/4 cup agave nectar (or maple syrup)
1 Tbsp melted coconut oil
1 Tbsp chia seeds
2 Tbsp flax seed meal
3 Tbsp mini choc chips (I used Enjoy Life - dairy free)
pinch salt
1/4 tsp cinnamon
(add anything else you want - raisins, nuts, dried fruit etc)

Directions: 1. Mix together all ingredients. Cover and refrigerate for about 30 mins.
2. Roll mixture into balls.
3. Place bites into airtight container and store in fridge for bout a week. (if they last that long) Easy right??! Love it. (These were gone within like 2 days.. ha ha ..oops)

Second endeavour - Chocolate Almond Date Balls ! I was excited for this to - one - use my dates and -two - use my Blendtec! :D
Ingredients:
1 cup dried dates
1 cup almonds
1 Tbsp coconut oil
1 Tbsp cocoa powder
1 tsp cinnamon
pinch salt (bout 1/8 tsp)
1/4 cup coconut for rolling (I used also almond meal) (optional)

Directions:
1. Place all ingredients except coconut in the food processor (or high powered blender such as Blendtec or Vitamix). Process for about 2 mins or until well blended / sticky.
2. Roll into balls. Roll in coconut or almond meal if desired. Store in refrigerator.

There you have it !! Two easy, tasty, healthy treats to try and have on hand when your sweet tooth hits, so you can indulge and not feel TOO guilty! Enjoy <3
