Pumpkin Oat Waffles

Awesome pumpkin waffles this AM! Yes!! It's that PUMPKIN time of year again!
I'm into pumpkin this year more than ever before it seems.
So of course I had to try me some pumpkin waffles for our Sunday brunch :) Gluten free & dairy free too of course... can't beat that ;) (Y) So pleased with how these turned out!! #impressive #glutenfreedairyfree #healthywaffles #pumpkinspiceeverything

Ingredients: Wet: 1 cup Pumpkin 1 ½ cups unsweetened Non-Dairy Milk (I used almond) 2 Tbsp Maple Syrup 2 Tbsp Coconut Oil (melted) 2 Tbsp Ground Flax Dry: 2 cups Oat Flour (gluten free) 2 tsp Baking Powder 2 tsp Cinnamon ¼ tsp freshly grated Nutmeg ½ tsp dried ground Ginger ½ tsp Cloves
**Optional: 1/4 cup dairy free chocolate chips (I used Enjoy Life chips) Instructions: Preheat waffle iron. Combine the dry ingredients in bowl. Combine the wet ingredients in a separate bowl. Mix the wet ingredients into the dry.
Spray waffle iron so your waffles don't stick! ;) Scoop batter into the waffle iron (I used bout 1/3 cup at a time) Cook until crisp (they take a little longer then normal waffles, so be a little patient with them, they will get crispy!) Top with toppings of your choice and enjoy!! **I topped with maple syrup, whipped coconut milk and strawberries! :)
